Grand Betsy’s Bacardi Rum Cake

Cake
  1. 1 cup chopped walnuts or pecans
  2. 1 package of lemon (or yellow) cake mix
  3. 1 3-3/4 oz Jello instant vanilla pudding
  4. 4 eggs
  5. 1/2 cup of water
  6. 1/2 cup of vegetable oil
  7. 1/2 cup of dark rum

Glaze

  1. 1/4 lb of butter
  2. 1/8 cup water
  3. 1 cup of sugar
  4. 1/2 cup of dark rum

What to Do for the Cake

  1. Preheat oven to 350.
  2. Grease and flour bundt pan (really, really well).
  3. Sprinkle nuts over the bottom of the pan.
  4. Mix all the ingredients under “cake” together.
  5. Pour the batter over the nuts.
  6. Bake 1 hour.
  7. Let the cake cool.
  8. Invert onto a serving plate
  9. Prick the top of the cake.
  10. Drizzle and smooth glaze evenly over the top and sides.
  11. Allow the cake to absorb the glaze.
  12. Repeat till glaze is used up.

What to Do For the Glaze

  1. Melt butter, water and sugar in a saucepan until it boils, stirring constantly.
  2. Remove from heat.
  3. Stir in rum.
